Baby kale, pesto chicken, leftover quinoa fried rice and almond butter/tamari/stevia dressing (got a little thick overnight.)

Top: Baby kale, whole avocado, pulled chicken and dressing (tahini, tamari, apple cider vinegar, and stevia) 

Bottom: Celery, carrots, plain hummus

I ate the carrots as a snack and piled everything else onto the arugula and chicken

Salad: Arugula mix with avocado

Dressing: Blend 2 tbs almond butter, 2 tbs nutritional yeast, 1/3 cup tahini, 1 tbs tamari, 3 tbs apple cider vinegar, 2 tbs dijon, 1/2 cup water and stevia to taste  

Turkey meatballs (frozen from Trader Joe's) mixed with a quinoa blend from Whole Foods and a peanut curry sauce from Traders

Dressing: Blend 2 tbs almond butter, 2 tbs nutritional yeast, 1/3 cup tahini, 1 tbs tamari, 3 tbs apple cider vinegar, 2 tbs dijon, 1/2 cup water and stevia to taste

Bottom: Quinoa California blend from Whole Foods, bell peppers, cucumber and hummus

Top: Arugula topped with leftover roasted zucchini and butternut squash and fresh avocado

Dressing: Blend 2 tbs almond butter, 2 tbs nutritional yeast, 1/3 cup tahini, 1 tbs tamari, 3 tbs apple cider vinegar, 2 tbs dijon, 1/2 cup water and stevia to taste 

Bottom: Cucumbers, red and yellow peppers and quinoa with raisins, edamame and onions (from Whole Foods)
